I started using Quinoa in my kitchen a few years ago and was very surprised as to how good it tasted. So I started using it in place of rice and have enjoyed every recipe that I made. The reason I started using it was to curb hunger pangs and stop snacking unnecessarily and I was pleased to find myself shaping up and losing weight and fitting into all my clothes. Quinoa is great for rices, salads, soups, casseroles, cookies and more. Today’s recipe Chickpea Quinoa is super-healthy and a great one pot vegetarian meal and a great option at the dinner table.

The Recipe For Easy Chickpeas Quinoa

The Ingredients For Easy Chickpeas Quinoa:

1 cup quinoa

1/2 cup cooked chick peas

1 medium onion, sliced

2 cloves garlic, crushed

1/2 inch ginger, crushed

2 tbsp olive oil

salt to taste

2 cups water

Method For Easy Chickpeas Quinoa:

Wash the quinoa in a strainer and keep aside till required.

Heat oil in a pan. Add the onion and fry till glazed. Add the ginger and garlic and stir fry till golden brown. Add the quinoa and gently stir fry for one minute. Transfer to rice cooker and add the chickpeas, 2 cups water and salt to taste. Mix well. Put on the cooker. Cook till done. Fluff with a fork and serve hot with any curry or side dish or eat it by itself.
