Mangalorean Ghee Rice

It’s really strange that I have never shared  Mangalorean Ghee Rice on this website because it’s something close to my heart.  And I have made it hundreds of times.  It’s a dish that we had over and over again at practically every special occasion.  It’s time to feature Mangalorean Ghee Rice since we ate it at so many get togethers, functions, weddings and birthdays.  My Mum made it to perfection and this recipe is hers.  As kids we loved picking out the fried cashew nuts and raisins and leaving the onions.  This happened so many times that it was no use gnashing her teeth.  She just indulged us and let us have our way.

The Recipe For Mangalorean Ghee Rice

The Ingredients For Mangalorean Ghee Rice:

2 cups rice, washed and drained

1 onion sliced fine

1/4 cup green peas optional

2 cloves garlic, crushed

½ inch ginger, crushed

2 cloves

a stick of cinnamon

2 cardamoms

3 tbsp ghee (be generous for a great outcome)

4 cups warm water salt to taste

2 tbsp ghee

NB:  I reduced the quantity of ghee used

Method For Mangalorean Ghee Rice:

Heat pan, add ghee lower to medium heat and add the spices. Stir fry till aromatic (a minute).  Add ginger garlic and onions and stir fry till onions are soft and ginger garlic smells good.  Add rice and stir gently till grains are coated and transparent (a couple of minutes).

Place all ingredients in rice cooker and cook till done.  Garnish with fried onions, cashew nuts and raisins. Serve hot.

Garnish:

1 onion sliced

1 tbsp cashew nuts

1 tbsp raisins (plums)

1 tbsp ghee.

Heat ghee in a pan and fry onions to a dark golden brown on medium heat.  Add nuts and plums and stir fry till raisins are plump and nuts beginning to brown.
