The Bethlehem Menu/Christmas 2021

Food is a global language. I used to wonder about the food eaten during the time of Jesus. So this year I decided to google that. It was amazing what I found. There was so much of information and one thing led to another and we as a family decided to cook The Bethlehem Menu for Christmas this year. It was a wonderful lesson in faith, history, geography, science and much more.

Christmas Scalloped Potatoes  are part of  The Bethlehem Menu because potatoes are one of the most popular of festive foods.  Although not eaten during Biblical times, the other ingredients like milk and cheese were. They are thinly sliced potatoes and onions are layered in a cheese sauce and baked until tender, golden, and bubbly.

Dundee Cake/ Light Fruit Cake/ Easy Dundee Fruit Cake

omehow although I bake Dundee Cake every year, and given the recipe to many friends, I have never blogged about it. This year I started the Christmas season by baking about 25 of these mini cakes for my daughters friends and teachers and gave them away. Some of them were even put into suitcases and taken abroad by the recipients to share with their families. Dundee Cake has an interesting history and I googled many recipes before choosing one and using Apricot Jam instead of Marmalade.
