Toasted coconut can enhance the flavour and texture of desserts like cakes, chocolates, cereal, puddings and energy bars. Did you know it’s also perfect in homemade curries and savouries?  Today I am going to share how to toast grated coconut and store it indefinitely for future use.  This is something I learnt after coming to Malaysia from a good friend.  Known as Kerisik in Malaysia, it is a handy addition to every goodie that comes out of your kitchen.  My Mum used to make exquisite curries with bits of dark, delicious, toasted coconut in them and we loved eating the thick, dark, fragrant gravy by the spoonful.  In fact, we enjoyed it more than the protein she used with it.  Prawns, chicken, beef…whatever, the very thought of it gets me nostalgic and drooling for a taste of her wonderful food which she created daily in her kitchen at home.  This is one recipe that you can make and store and enjoy sniffing ( I love to do that) every now and then.

The Recipe For How To Toast Coconut/Kerisik

Ingredients For How To Toast Coconut/Kerisik:

1 large coconut grated (250 t0 300gms)

Can also use same quantity of desiccated coconut (sweet or plain)

Stove Top Method:

Grate coconut. Place grated coconut in a large wok. You must have plenty of place to stir the grated coconut around.

Cook over medium-low heat, stirring frequently with a wooden spatula, until grated coconut is mostly golden brown.

When coconut is toasted to your preferred colour, remove to a tray to cool to halt the cooking process.

Oven Method:

Preheat oven to 175C/350F

Grate coconut.  Spread grated coconut on a baking paper in a thin layer and bake in preheated oven for 5-10 minutes, stirring with a wooden spatula, every few minutes.

When coconut is toasted to your preferred colour, remove from oven and cool to halt the cooking process.

This is my method.  I use a combination of the stove-top and oven method.

Place grated coconut in a large wok. You must have plenty of place to stir the grated coconut around.

Cook over medium-low heat, stirring frequently with a wooden spatula, until grated coconut is mostly golden brown.

Transfer to baking paper on a large oven tray and bake for 10 minutes or less until brown or colour of your choice.  It can be as dark as you like, but still edible. Cool completely and grind in blender to a smooth powder.  Bottle and store for use as required.
